Michel Gabbud, Director of Restaurants

Michel Gabbud believes that great food and impeccable service must go hand in hand and that one challenges the other. His entrance into the culinary world was at an early age. Originally from Switzerland, Michel was fortunate to travel often, which was eye-opening in regards to food, dining cultures and different approaches to cooking and enjoying meals.

At Trump Hotel Chicago, Michel oversees the food programs at the property's Michelin starred Sixteen, and the adjoining Bridges Room.

Before joining the team at TIHT, Michel was the general manager at Sophie's at Saks Fifth Avenue, a fine casual restaurant in downtown Chicago. Previously, he spent two years in Beijing working for Park Hyatt as the food and beverage assistant, which he refers to as the most interesting and challenging experience of his career. Michel lived in Chicago for several years before that and held positions in dining outlets at The Peninsula, Four Seasons and Sofitel Water Tower. Early in his career, his first experience in the culinary industry was working for Sandals Resorts International in the Bahamas and in Jamaica.

When he's not at work or exploring new restaurants, Michel enjoys spending time with his wife and their two young boys. Along with English, he also speaks German, French, and Spanish. Additionally, Michel likes to play tennis and has a love for the outdoors.
